Ingredients

450g boneless skinless chicken thighs or breasts

1 tablespoon chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

1 tablespoon fresh lime juice

1 tablespoon chopped fresh cilantro (optional for garnish)

Instructions

1. Combine chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, oregano, salt, and pepper in a small bowl.

2. Add chicken to a bowl or zip-top bag and drizzle with olive oil and lime juice.

3. Sprinkle the spice mix over the chicken and toss until evenly coated.

4. Marinate for at least 30 minutes, up to 24 hours for best flavor.

5. Heat a skillet over medium-high heat and add a bit of oil.

6. Cook the chicken 5–7 minutes per side until browned and cooked through.

7. Let rest for 5 minutes, then chop into bite-sized pieces.

8. Garnish with chopped cilantro if desired and serve.

Notes

For extra smokiness, grill the chicken instead of using a skillet.

You can double the spice mix and store it for quick seasoning next time.
