Ingredients

1 lb chicken breast

2 tbsp olive oil

1 tbsp Cajun seasoning

3 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1 cup heavy cream

3/4 cup grated Parmesan cheese

8 oz rotini pasta

2 tbsp fresh parsley, chopped

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. Cut chicken breast into bite-sized pieces. Toss in a bowl with olive oil, Cajun seasoning, salt, and pepper.

2. Heat a skillet over medium-high heat. Add chicken and cook until golden and fully cooked, about 6–8 minutes. Set aside.

3. In the same skillet, sauté minced garlic for 1 minute. Add sun-dried tomatoes and cook for 2 minutes.

4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until smooth and creamy.

5. Cook rotini pasta in salted boiling water according to package instructions. Drain well.

6. Add pasta to the Alfredo sauce and stir to coat evenly.

7. Return chicken to the pan and mix until heated through.

8. Garnish with fresh parsley and serve hot.

Notes
