Ingredients
1.5 lbs boneless skinless chicken breast
2 tablespoons olive oil
3 cups broccoli florets
0.5 cup grated Parmesan cheese
2 cups fresh spinach or 1 cup frozen spinach thawed
1 cup artichoke hearts chopped
1 cup sliced mushrooms
3 cloves garlic minced
1.5 cups heavy cream
0.75 cup grated Parmesan cheese for sauce
0.25 cup chopped fresh basil
0.5 teaspoon salt
0.5 teaspoon black pepper
Instructions
1. Preheat oven to 425°F. Toss broccoli with olive oil, salt, pepper, and 0.5 cup Parmesan. Roast for 20–25 minutes until crispy.
2. Season chicken breasts with salt and pepper. Sear in a hot skillet with olive oil until golden and cooked through. Set aside.
3. In the same skillet, sauté garlic and mushrooms until tender.
4. Stir in spinach and artichokes and cook until warmed through.
5. Add heavy cream and bring to a gentle simmer. Stir in Parmesan and basil. Let it thicken slightly.
6. Slice chicken and return to skillet or serve over sauce.
