Ingredients

2 chicken breasts or thighs, cubed

250g pasta (rigatoni or penne)

150g feta cheese (smoked or regular block)

3/4 cup heavy cream

2 garlic cloves

2 tablespoons olive oil

1/2 teaspoon chili flakes

1 tablespoon fresh parsley, chopped

250g asparagus

2 tablespoons grated parmesan cheese

salt and pepper to taste


Instructions

1. Trim asparagus, place on a baking sheet, and drizzle with olive oil. Season with garlic, salt, pepper, and parmesan. Roast at 425°F (220°C) for 15–18 minutes.

2. Cook pasta in salted boiling water until al dente. Reserve 1/4 cup pasta water, then drain.

3. Season cubed chicken with salt, pepper, and chili flakes. Sear in a hot skillet with olive oil until golden and fully cooked.

4. In a blender, combine feta, cream, garlic, olive oil, and a pinch of chili flakes. Blend until smooth. Warm gently in a pan.

5. Toss pasta with the warm smoked feta sauce.

6. Plate pasta, top with chicken and roasted asparagus. Garnish with parsley and extra chili flakes.

Notes

To intensify the smoky flavor, add a tiny drop of liquid smoke to the feta cream.

Reheat sauce slowly to maintain its creamy consistency.
