Ingredients

400g chicken breast or thigh (boneless, skinless)

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 tablespoon olive oil

2 tablespoons unsalted butter

3 cloves fresh garlic (minced)

250g rotini pasta

1 cup heavy cream

1 cup parmesan cheese (grated)

1 tablespoon Cajun seasoning

2 tablespoons parsley (fresh, chopped)


Instructions

1. Cut chicken into bite-sized pieces and season with salt, pepper, garlic powder, and paprika.

2. Heat olive oil in a skillet over medium-high and sear the chicken until golden and fully cooked. Remove and set aside.

3. In the same skillet, melt butter and sauté the minced garlic until fragrant. Return chicken to coat in garlic butter.

4. Cook the rotini in salted boiling water until al dente. Reserve some pasta water before draining.

5. In a pan, simmer heavy cream. Add Cajun seasoning and parmesan cheese. Stir until smooth and creamy.

6. Mix in the cooked pasta. Adjust the sauce with reserved pasta water if needed.

7. Plate the pasta with garlic butter chicken bites and top with fresh parsley. Serve hot and enjoy!

Notes

Add spinach or bell peppers to the pasta for extra nutrients and color.
