Ingredients

200g ladyfingers (Savoiardi)

300g fresh raspberries

250g mascarpone cheese

200ml heavy cream

80g powdered sugar

1 teaspoon vanilla extract

4 tablespoons raspberry jam or preserves

1 tablespoon warm water

1 tablespoon raspberry liqueur (optional)

1 tablespoon unsweetened cocoa powder (for dusting)

1 tablespoon powdered sugar (for garnish)


Instructions

1. Beat mascarpone, powdered sugar, and vanilla extract until smooth.

2. Whip the heavy cream until stiff peaks form, then fold it into the mascarpone mixture.

3. In a small bowl, combine raspberry jam, warm water, and liqueur (if using).

4. Set aside a handful of raspberries for garnish and mash the rest lightly.

5. Quickly dip each ladyfinger in the raspberry mixture and line the bottom of your dish.

6. Spread half of the mascarpone cream over the ladyfingers.

7. Spoon half of the mashed raspberries on top.

8. Repeat with another layer of dipped ladyfingers, cream, and remaining raspberries.

9. Cover and refrigerate for at least 4 hours or overnight.

10. Before serving, dust with cocoa powder, top with fresh raspberries, and sprinkle powdered sugar.
