Ingredients

1 pound chicken breast or thighs, cut into chunks

1 cup orzo pasta

1 cup freshly grated Parmesan cheese

2 cloves garlic, minced

1 cup heavy cream

2 cups chicken broth

1 tablespoon olive oil

1 tablespoon butter

2 tablespoons fresh parsley, chopped

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Season the chicken with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear the chicken until browned and cooked through, about 6-7 minutes. Remove and set aside.

3. In the same pan, melt the butter and sauté the minced garlic until fragrant.

4. Stir in orzo and toast for 2-3 minutes.

5. Add chicken broth and bring to a simmer. Cook uncovered for 8-10 minutes, stirring occasionally.

6. Reduce heat to low and stir in heavy cream and Parmesan cheese until melted and creamy.

7. Return the chicken to the pan and mix with the creamy orzo.

8. Cook together for 2-3 more minutes until heated through.

9. Garnish with chopped parsley before serving.

Notes
