Ingredients

500g chicken breast (boneless, skinless)

250g rotini pasta

2 tablespoons olive oil

2 tablespoons butter

4 cloves garlic (minced)

1 cup heavy cream

1 cup parmesan cheese (grated)

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons parsley (fresh, chopped)


Instructions

1. Boil rotini pasta in salted water until al dente. Drain and set aside, reserving 1/4 cup of pasta water.

2. Slice chicken breasts into strips. Season with salt and pepper.

3. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and fully cooked. Remove and set aside.

4. Lower heat, add butter to the skillet, then sauté garlic for 1 minute until fragrant.

5. Pour in heavy cream and bring to a gentle simmer. Stir in parmesan cheese until melted and smooth.

6. Stir in reserved pasta water to thin the sauce if needed.

7. Add cooked rotini to the sauce and toss to coat evenly.

8. Return chicken to skillet and mix or serve alongside pasta. Garnish with parsley and serve hot.

Notes

Add mushrooms or spinach to the sauce for extra flavor and texture.

Swap the rotini for penne or fusilli if preferred—just keep the grooves!
