Ingredients
1 sheet puff pastry, thawed
6 oz brie cheese, cut into cubes
1/3 cup cranberry sauce
1 egg, beaten (for egg wash)
1 tsp fresh thyme leaves (optional)
2 tbsp chopped walnuts or pecans (optional)
Instructions
1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin.
2. Roll out the puff pastry and cut into 2-3 inch squares.
3. Press each square into the mini muffin tin to form cups.
4. Add a cube of brie into each cup.
5. Spoon about a teaspoon of cranberry sauce on top of the brie.
6. Sprinkle thyme leaves or chopped nuts if using.
7. Brush exposed pastry with beaten egg for a golden finish.
8. Bake for 12–15 minutes or until puffed and golden brown.
9. Let cool for 5 minutes in the tin, then serve warm or at room temp.
Notes
These are best served fresh but reheat beautifully in the oven.
Try swapping cranberry sauce for fig jam or apricot preserves for variation.
