Ingredients

6 slices bacon, chopped

2 tablespoons butter

1 yellow onion, chopped

3 cloves garlic, minced

2 carrots, diced

2 stalks celery, diced

3 cups diced potatoes (Yukon gold or russet)

3 cups corn kernels (fresh, frozen, or canned)

4 cups chicken broth

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped parsley or chives


Instructions

1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside, leaving some fat in the pot.

2. Add butter and sauté onions, garlic, carrots, and celery until softened, about 5–7 minutes.

3. Stir in diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.

4. Add corn kernels and heavy cream. Simmer for another 5–10 minutes to blend the flavors.

5. (Optional) Use an immersion blender to blend part of the chowder for a thicker texture.

6. Season with salt and pepper. Stir in half of the bacon and garnish with remaining bacon and parsley or chives before serving.

Notes

For a vegetarian version, skip the bacon and use vegetable broth with a dash of smoked paprika.

If using frozen corn, no need to thaw—just stir it in directly and simmer longer if needed.
