Ingredients
6 slices bacon, cooked and crumbled
2 tablespoons butter
1 medium onion, diced
2 cloves garlic, minced
3 tablespoons all-purpose flour
4 cups chicken broth
4 cups russet potatoes, peeled and cubed
1 cup heavy cream
1 cup sharp cheddar cheese, shredded
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup green onions, chopped
Instructions
1. Cook bacon in a large pot until crispy. Remove and set aside. Leave about 1 tablespoon of bacon fat in the pot.
2. Add butter and sauté diced onion until softened. Stir in garlic and cook for another 1 minute.
3. Sprinkle flour over the onions and stir to make a roux. Cook for 1–2 minutes to remove raw flour taste.
4. Gradually whisk in chicken broth and add the cubed potatoes. Bring to a boil, then reduce heat and simmer until potatoes are fork-tender, about 15 minutes.
5. Use an immersion blender to partially blend the soup, leaving some chunks for texture.
6. Stir in heavy cream, cheddar cheese, and sour cream. Mix until cheese is melted and the soup is creamy.
7. Season with salt and pepper to taste.
