Ingredients
2 cups cooked shredded chicken
3/4 cup pearl couscous
2 carrots, diced
2 celery stalks, chopped
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon olive oil
6 cups chicken broth
2 tablespoons chopped fresh dill
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until softened.
2. Stir in minced garlic and cook for 1–2 minutes until fragrant.
3. Pour in chicken broth and add the bay leaf. Bring to a boil, then reduce to a simmer.
4. Add pearl couscous and simmer uncovered for 10–12 minutes, or until couscous is tender.
5. Stir in shredded chicken and chopped dill. Simmer another 5–7 minutes.
6. Season with salt and pepper. Remove the bay leaf before serving.
7. Serve warm and garnish with extra dill if desired.
Notes
For best texture, cook couscous separately if storing leftovers.
