Ingredients

500g chicken breasts, sliced into cutlets

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

200ml coconut milk

2 cloves garlic, minced

1 tablespoon lemon zest

2 tablespoons lemon juice

2 tablespoons grated Parmesan cheese

200g green beans, trimmed

1 tablespoon olive oil (for beans)

2 tablespoons grated Parmesan (for topping)

80g feta cheese, crumbled

2 tablespoons Greek yogurt

1/4 teaspoon chili flakes

1 teaspoon lemon juice (for feta cream)


Instructions

1. Preheat oven to 425°F and toss green beans with olive oil, salt, and pepper. Roast 15–20 minutes. Add Parmesan during last 5 minutes.

2. In a bowl, mix feta, Greek yogurt, chili flakes, and lemon juice. Chill until ready to serve.

3. Slice chicken breasts into cutlets and season with garlic powder, salt, and pepper.

4. Heat olive oil in skillet and sear chicken 4–5 minutes per side until golden and cooked. Set aside.

5. In same pan, sauté garlic, then add coconut milk, lemon zest, lemon juice, and Parmesan. Simmer until slightly thick.

6. Return chicken to skillet and coat with sauce.

7. Plate chicken with sauce, chili feta cream, and crispy green beans. Garnish if desired.

Notes

Don’t skip searing the chicken — it adds flavor and texture that makes a big difference.

You can prep the chili feta cream and roast the beans ahead to speed things up at dinner time.
