Ingredients
1 lb large shrimp, peeled and deveined
1 cup unsweetened shredded coconut
1 cup panko breadcrumbs

1/2 tsp garlic powder
1/2 tsp paprika
3 tbsp vegetable oil
3 cups cooked jasmine or long-grain rice
2 tbsp fresh chives or parsley, chopped (optional)
Instructions
1. In three bowls, prepare your breading station: flour with salt, pepper, garlic powder, and paprika; beaten eggs; coconut mixed with panko.
2. Pat shrimp dry. Dredge in seasoned flour, dip in egg, then press into the coconut-panko mixture to coat completely.
