4 pork sausages

1.5 pounds potatoes (Russet or Yukon Gold)

3 tablespoons butter

0.5 cup milk

2 large onions (sliced)

2 tablespoons flour

2 cups beef stock

1 tablespoon vegetable oil

0.25 teaspoon salt

0.25 teaspoon black pepper

1 tablespoon fresh parsley (optional, chopped)


Instructions

1. Heat oil in a skillet over medium heat. Add sausages and cook for 15–20 minutes, turning occasionally until browned and cooked through.

2. Meanwhile, peel and chop potatoes. Boil in salted water until tender (about 15 minutes).

3. Drain the potatoes and mash with butter and warm milk. Season with salt and pepper.

4. In the same skillet used for sausages, add sliced onions. Cook over medium-low heat until golden and soft (about 10–15 minutes).

5. Stir in flour and cook for 1 minute. Gradually add beef stock, stirring constantly to prevent lumps.

6. Simmer the gravy until thickened to desired consistency.

7. Serve sausages over mashed potatoes, topped generously with onion gravy. Garnish with fresh parsley if using.

Notes

For ultra-smooth mashed potatoes, warm the milk before mixing to avoid a gluey texture.
