Ingredients
2 cups cooked shredded chicken
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 chipotle peppers in adobo, chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 can (15 oz) pinto beans, drained and rinsed
1 ½ cups corn kernels (fresh, frozen, or canned)
4 ounces cream cheese, softened
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; cook until soft and fragrant.
2. Stir in chopped chipotle peppers, cumin, oregano, and salt. Let them toast for 1 minute.
3. Add chicken broth, diced tomatoes, pinto beans, corn, and cooked chicken. Bring to a boil, then reduce heat and simmer for 15 minutes.
4. Add cream cheese and stir until fully melted and smooth. Simmer for another 5 minutes to thicken.
5. Serve hot with your choice of toppings like lime, cilantro, cheese, or avocado.
Notes
You can use rotisserie chicken to save time on prep.
For less spice, reduce the number of chipotle peppers or remove the seeds.
