Ingredients

1 lb boneless skinless chicken thighs

1 cup fresh parsley

1 cup fresh cilantro

4 garlic cloves

3 tbsp red wine vinegar

1/2 cup olive oil

1/2 tsp red pepper flakes

2 cups cooked rice or quinoa

1 cup cherry tomatoes

1 cup cucumber slices

3/4 cup Greek yogurt

2 tbsp lemon juice

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. Blend parsley, cilantro, 2 garlic cloves, vinegar, olive oil, red pepper flakes, salt, and pepper to make chimichurri.

2. Set aside half of the chimichurri. Marinate chicken in the other half for 30 minutes or overnight.

3. Grill chicken over medium-high heat until cooked through, then slice.

4. Mix yogurt, 2 minced garlic cloves, lemon juice, olive oil, and a pinch of salt to make garlic sauce.

5. Assemble bowls with rice, chicken, cherry tomatoes, cucumbers, garlic sauce, and reserved chimichurri.

Notes
