Ingredients
2 cups cooked chicken, chopped or shredded
1 cup diced apple (Granny Smith or Honeycrisp)
1 cup red grapes, halved
1/2 cup thinly sliced celery
1/2 cup chopped walnuts
2 cups chopped romaine lettuce
1/4 cup mayonnaise
1/4 cup plain Greek yogurt
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Chop cooked chicken into bite-sized pieces. Dice apples, slice grapes and celery, and chop walnuts.
2. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and pepper.
3. In a large bowl, combine chicken, apples, grapes, celery, and walnuts.
4. Pour the dressing over the salad and toss until evenly coated.
5. Refrigerate for at least 20 minutes before serving.
6. Serve chilled over romaine lettuce, in a wrap, or with crackers.
Notes
Use rotisserie chicken for faster prep and added flavor.
For extra crunch, add apples and walnuts just before serving.
