Ingredients
2 tablespoons olive oil
2 tablespoons unsalted butter
4 chicken breasts
0.5 teaspoon salt
0.5 teaspoon black pepper
3 cloves garlic, minced
1 small shallot, minced
1 cup chicken broth
1 cup heavy cream
0.5 cup grated parmesan cheese
4 cups baby spinach
0.25 teaspoon red pepper flakes (optional)
Instructions
1. Pat chicken dry and season with salt and pepper on both sides.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.
3. In the same pan, add remaining butter. Sauté shallot and garlic for 2–3 minutes until fragrant.
4. Pour in chicken broth to deglaze, scraping up any browned bits.
5. Stir in heavy cream and parmesan. Simmer 2–3 minutes to thicken slightly.
6. Add spinach and stir until wilted.
7. Return chicken to skillet, spoon sauce over the top, and simmer 2–3 more minutes.
8. Serve hot, optionally topped with red pepper flakes or extra parmesan.
Notes
For a thicker sauce, simmer a few extra minutes or add more parmesan.
Boneless thighs can be used for extra juiciness and flavor.
