Ingredients

300 grams chicken thighs or breasts

1 tablespoon olive oil

1 tablespoon lemon juice

1 clove garlic, minced

1 tablespoon honey

100 grams strawberries, chopped

1 small jalapeño, thinly sliced

2 tablespoons red onion, finely chopped

1 tablespoon fresh mint, chopped

1 tablespoon lime juice

Salt and pepper to taste


Instructions

1. Combine olive oil, garlic, lemon juice, salt, and pepper in a bowl. Add chicken pieces and mix to coat. Marinate for 20 minutes.

2. Heat a grill pan or skillet over medium-high heat. Cook chicken bites for 6–8 minutes until browned and cooked through, turning halfway.

3. In a separate bowl, mix strawberries, jalapeño, red onion, mint, lime juice, and a pinch of salt. Let rest while chicken cooks.

4. Drizzle honey over the cooked chicken and cook for another minute to glaze.

5. Transfer chicken to serving bowls and top with strawberry salsa.

6. Garnish with extra mint and jalapeño if desired, and serve immediately.

Notes

Use fresh strawberries for best texture and flavor.

For a spicier version, leave the seeds in the jalapeño.
