Ingredients
1 pound ground beef
1 can (10 oz) Rotel tomatoes with green chilies
16 oz Velveeta cheese, cubed
4 oz cream cheese
1 packet ranch seasoning mix
2 tablespoons chopped cilantro
2 tablespoons diced tomatoes (optional, for garnish)
Instructions
1. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as it cooks. Drain excess grease.
2. Add the Rotel tomatoes (with liquid), Velveeta, and cream cheese into the skillet. Stir continuously as the cheeses melt.
3. Sprinkle in the ranch seasoning and stir to combine thoroughly. Cook on low, stirring frequently to prevent sticking.
4. Once fully melted and creamy, remove from heat.
5. Garnish with chopped cilantro and diced tomatoes if desired.
6. Serve hot with tortilla chips, vegetables, or over baked potatoes.
Notes
For a milder version, use mild Rotel or swap with diced tomatoes and green chilies separately.
To reheat leftovers, stir in a splash of milk while warming on the stovetop or in the microwave.
