Ingredients
1 pound ground beef
2 tablespoons taco seasoning
2 tablespoons tomato paste
1/4 cup water
2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
4 large flour tortillas
2 tablespoons butter or oil (for toasting)
Instructions
1. In a skillet over medium-high heat, cook the ground beef until browned, breaking it apart as it cooks.
2. Drain excess grease, then stir in taco seasoning, tomato paste, and water. Simmer for 2–3 minutes until thickened.
3. Lay tortillas flat and sprinkle cheese over half of each one.
4. Add a layer of the seasoned beef mixture on top of the cheese.
5. Add more cheese on top of the beef, then fold the tortillas in half.
6. In a clean skillet, melt butter or heat oil over medium heat.
7. Toast each quesadilla for 2–3 minutes per side until golden brown and crispy.
8. Let cool slightly, slice into wedges, and serve warm.
