Ingredients

2.5 pounds Yukon Gold potatoes

3 cloves garlic, minced

2 cups heavy cream

2 tablespoons unsalted butter

1.5 cups shredded Gruyère cheese

0.5 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves

1 teaspoon salt

0.5 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F (190°C).

2. Peel and thinly slice the potatoes to about 1/8 inch thick using a mandoline or sharp knife.

3. In a medium saucepan, melt butter over medium heat. Add minced garlic and thyme, sauté for 1 minute.

4. Pour in the heavy cream and bring to a gentle simmer. Season with salt and pepper.

5. In a greased baking dish, layer the sliced potatoes evenly, overlapping slightly.

6. Pour some of the garlic cream mixture over the first layer, followed by a sprinkle of both cheeses.

7. Repeat the layers until all ingredients are used, ending with a thick layer of cheese on top.

8. Cover the dish with foil and bake for 40 minutes.
