Ingredients
500g chicken breasts or thighs
1.5 tbsp Cajun seasoning
2 tbsp olive oil or butter
3 cloves garlic, minced
1 cup heavy cream
3/4 cup grated Parmesan cheese
250g rotini pasta
2 tbsp chopped fresh parsley
Salt and pepper to taste
Instructions
1. Cut chicken into bite-sized chunks. Season with Cajun seasoning, salt, and olive oil. Toss well to coat.
2. Heat a skillet over medium-high heat. Add oil or butter and sear chicken bites in batches for 5–7 minutes until golden and cooked through. Set aside.
3. Boil rotini in salted water according to package directions. Drain and set aside.
4. In the same skillet, reduce heat and sauté garlic until fragrant. Pour in cream and simmer.
5. Stir in Parmesan cheese and cook until melted and smooth.
6. Add rotini to the sauce and toss until coated. Mix in fresh herbs.
7. Plate pasta with chicken bites and sprinkle with chopped parsley.
Notes
Make sure not to overcrowd the pan while cooking chicken to get the perfect sear.
Add a splash of pasta water or extra cream if the Alfredo sauce thickens too much when reheating.
