Ingredients

12 ounces spaghetti

2 tablespoons olive oil

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

1/4 cup chopped fresh parsley

10 to 12 mozzarella balls (bocconcini or ciliegine)

5 to 6 green or black olives, sliced into rings

Instructions

1. Cook the spaghetti in salted water until al dente. Drain and set aside.

2. Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds.

3. Stir in crushed tomatoes, tomato paste, salt, pepper, Italian seasoning, and red pepper flakes. Simmer for 10 minutes.

4. Add the cooked spaghetti to the sauce and toss to combine. Cook for another 2 to 3 minutes.

5. Press one olive ring into the center of each mozzarella ball to form “eyeballs.”

6. Place mozzarella eyeballs evenly across the pasta.

7. Garnish with chopped parsley and serve immediately.

Notes

For extra spooky effect, add a few drops of red gel food coloring to the sauce.

Store the mozzarella eyeballs separately if making ahead to keep them fresh and shapely.
