Ingredients

2 large apples (Granny Smith and Honeycrisp mixed), peeled and diced

1 and 1/2 cups all-purpose flour

1/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon nutmeg

2 large eggs

1/3 cup milk

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

1/2 teaspoon vanilla extract (for glaze)


Instructions

1. Peel and dice apples into small chunks, then pat dry with a paper towel.

2. In a large bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.

3. In another bowl, mix eggs, milk, and vanilla. Pour into dry ingredients and stir just until combined.

4. Fold in the apple chunks until evenly distributed in the batter.

5. Heat 2–3 inches of oil in a deep skillet to 350°F (175°C).

6. Drop 1/4 cup scoops of batter into the hot oil. Fry 2–3 minutes per side or until golden brown.

7. Drain fritters on paper towels to remove excess oil.

8. Mix powdered sugar, milk, and vanilla for the glaze.

9. Drizzle glaze over warm fritters or dust with powdered sugar before serving.

Notes

Always use a thermometer to maintain proper oil temperature and ensure crisp, evenly cooked fritters.

For extra spice, add a pinch of ground cloves or allspice to the batter.
