Ingredients
1 tablespoon olive oil
2 pounds beef chuck roast, cut into 1-inch cubes
1 medium onion, chopped
3 cloves garlic, minced
8 ounces baby bella mushrooms, sliced
2 cups beef broth
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
2 tablespoons cornstarch
3 tablespoons cold water
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Heat olive oil in a skillet or Instant Pot on sauté mode. Sear the beef chunks in batches until browned. Transfer to slow cooker or leave in Instant Pot.
2. In the same pan, sauté chopped onion until soft. Add garlic and cook for 1 minute.
3. Add the sautéed onions, garlic, sliced mushrooms, beef broth, Worcestershire sauce, and soy sauce to the beef.
4. Cook on LOW for 7–8 hours or HIGH for 4–5 hours in slow cooker. For Instant Pot, cook on Manual or Meat/Stew for 35 minutes, then natural release for 10–15 minutes.
5. Mix cornstarch with cold water to make a slurry. Stir into the hot mixture and cook on sauté mode (or stovetop) until thickened, about 10–15 minutes.
6. Taste and adjust seasoning. Serve hot over mashed potatoes, noodles, or rice.
