Ingredients
1 pound ground beef
1 small yellow onion, diced
2 garlic cloves, minced
1 10-ounce can enchilada sauce
1 8-ounce can tomato sauce
1 20-ounce package cheese tortellini (refrigerated or frozen)
1 ½ cups shredded Mexican cheese blend
½ cup sour cream
2 tablespoons fresh cilantro, chopped (optional)
Instructions
1. Heat a large skillet over medium-high heat. Add ground beef and diced onions, cooking until browned and softened.
2. Stir in minced garlic and cook for 30 seconds until fragrant.
3. Add enchilada sauce and tomato sauce. Stir to combine and simmer for 2–3 minutes.
4. Add tortellini directly into the skillet. Cover and cook for 5–7 minutes, stirring occasionally, until tender.
5. Sprinkle shredded cheese on top. Cover and let melt for 2 minutes.
6. Remove from heat, top with sour cream and fresh cilantro. Serve hot.
Notes
If using frozen tortellini, add 2–3 minutes to the cooking time and ensure it’s fully heated before serving.
For a spicier version, use hot enchilada sauce or add diced jalapeños while browning the beef.
