Ingredients

400g broccoli florets

1.5 tablespoons olive oil

0.5 teaspoon salt

0.25 teaspoon black pepper

0.5 cup panko breadcrumbs

0.25 teaspoon garlic powder

0.25 teaspoon smoked paprika

0.25 cup mayonnaise (vegan or regular)

1 tablespoon sriracha

1 tablespoon maple syrup (or honey)

1 teaspoon rice vinegar


Instructions

1. Preheat oven to 425°F (220°C).

2. Toss broccoli with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until edges are crisp.

3. While broccoli roasts, toast breadcrumbs in a skillet over medium heat. Stir often until golden. Add garlic powder and smoked paprika, then remove from heat.

4. In a small bowl, whisk together mayo, sriracha, maple syrup, and rice vinegar until smooth.

5. Transfer roasted broccoli to a serving plate. Drizzle with sauce and sprinkle with seasoned breadcrumbs.

6. Serve immediately or at room temperature.

Notes

For the crispiest broccoli, avoid overcrowding the pan while roasting.
