Ingredients

4 boneless skinless chicken breasts

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon salt

1/2 teaspoon black pepper

1 medium red onion thinly sliced

2 cloves garlic minced

2 medium apples thinly sliced (Honeycrisp or Pink Lady)

1 teaspoon fresh thyme leaves

3/4 cup chicken broth

1 tablespoon apple cider vinegar


Instructions

1. Season chicken breasts with salt and pepper.

2. Heat olive oil and butter in a large skillet over medium-high heat.

3. Sear chicken for 4-5 minutes per side until golden, then remove from skillet.

4. In the same skillet, add red onion and garlic. Sauté until soft, about 4-5 minutes.

5. Add apple slices and thyme, cooking for 2-3 minutes until slightly tender.

6. Pour in chicken broth and apple cider vinegar. Scrape up any browned bits.

7. Return chicken to skillet, spoon sauce over, cover, and simmer for 10-12 minutes.

8. Remove thyme sprigs, plate, and drizzle with remaining sauce before serving.

Notes

Use firm apples like Honeycrisp or Pink Lady to avoid them becoming mushy.
