Ingredients

2 pounds butternut squash, peeled and cubed

2 apples, thinly sliced

6 slices bacon, chopped

1 large onion, diced

1 tablespoon fresh thyme leaves

1 cup breadcrumbs

3 tablespoons butter, melted

1 teaspoon salt

0.5 teaspoon black pepper

1 tablespoon olive oil


Instructions

1. Preheat the oven to 400°F and grease a baking dish.

2. Toss butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.

3. In a skillet, cook chopped bacon until crisp. Remove and set aside.

4. In the same skillet, sauté diced onions until golden and soft.

5. Layer roasted squash and apple slices in the prepared dish.

6. Top with cooked onions, bacon, and fresh thyme.

7. Combine breadcrumbs with melted butter and a pinch of salt, then sprinkle over the top.

8. Bake at 375°F for 20-25 minutes until golden brown and bubbling.

Notes

For a vegetarian version, omit bacon and use toasted walnuts or pecans instead.
