Ingredients
2 pounds butternut squash, peeled and cubed
2 apples, thinly sliced
6 slices bacon, chopped
1 large onion, diced
1 tablespoon fresh thyme leaves
1 cup breadcrumbs
3 tablespoons butter, melted
1 teaspoon salt
0.5 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Preheat the oven to 400°F and grease a baking dish.
2. Toss butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.
3. In a skillet, cook chopped bacon until crisp. Remove and set aside.
4. In the same skillet, sauté diced onions until golden and soft.
