Ingredients

2 cups shredded chicken

1 cup chopped carrots

1 cup chopped celery

1 cup green peas

3 cloves garlic, minced

1 small onion, diced

1 teaspoon turmeric

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon black pepper

2 tablespoons olive oil

4 cups chicken broth

1 cup full-fat coconut milk

Salt to taste

Fresh parsley for garnish (optional)


Instructions

1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
