Ingredients
12 cups popped popcorn

0.5 cup light corn syrup
0.5 teaspoon salt
0.5 teaspoon baking soda
1 teaspoon vanilla extract
Instructions

3. Bring the mixture to a boil and let it boil without stirring for 5 minutes.
4. Remove from heat and quickly stir in baking soda and vanilla extract. The mixture will foam.
5. Immediately pour the caramel over the popcorn and stir to coat evenly.
6. Spread the coated popcorn onto two parchment-lined baking sheets.
7. Bake at 250°F for 1 hour, stirring every 15 minutes.
8. Let cool completely before breaking into pieces and storing.
Notes
Use plain popcorn to avoid clashing flavors—avoid microwave popcorn with butter.
Stir the popcorn every 15 minutes during baking to ensure even caramel coating.
